How to make a Bulgarian Easter Kozunak



 
There are millions of way to make a kosunak. In its essence, a kosunak is a sweet bread, and there's plenty of variation on how to make it. Many ingredients are added to make it even better, but they may vary – from walnuts and almonds to rum and rakia. Making a vegan one is also possible, and we'll include a recipe below.

History of kosunak

Like most Balkan foods, the origins are fairly unclear. It seems like the original recipe came from Greece, and then spread to Bulgaria and Romania. Its even possible that kosunak originates from the Ancient world, but that’s too far in the past for any sort of correct assessment. In any case, kozunac became an essential part of Bulgarian culture, and an Easter celebration here isn’t complete without one.

Why eat kosunak?

Bulgarians love their kosunak because it’s the food they eat after the longest period of fasting in the Bulgarian Orthodox Christian calendar. For 7 weeks prior to Easter, every good Christian must cleanse their body and spirit out of sin. That happens through praying and abstaining from rich foods and sinful thoughts.
That is why a kosunak after this long period is often the sweetest thing one can taste, especially after the strict fasting on Crucifixion Friday (called Good Friday aboard) when one must not eat any food.

How to make traditional kosunak?

Kosunak is one of those things that are easy to make but hard to master. Indeed, that makes every kosunak somewhat unique. Feel free to experiment with these recipes and add your own personal touch to the kosunak. Here are the most popular ways to make it! Bear in mind that the recipes tend to be focused on making big, family-sized one. If you don’t have a giant Balkan family, its best to lower the quantity while keeping the general proportions.
Ingredients:
1 kg of wheat flour
5 room-temperature eggs
200 gr of butter
250 gr of milk
300-350 gr of sugar
40 gr of yeast
 Touch of vanilla
100 gr of raisins (seasoned with rum or soaked in water)
2 grated lemon crusts
Touch of salt
Now let's make our kozunak!
You’d get the best results if all your ingredients are at room temperature, maybe even a bit warmer.
First, you must sift your flour. Take the eggs and mix them with the sugar and the grated lemon crusts. Warm up the milk to about 40-50 °C. Put the yeast, the salt, and one large spoon of flour in the milk, mix them and leave them aside for now.
Get your flour. Put it in the large bowl and form a sort of crater in the middle, where you must pour the egg, raisins, and milk mixtures. Scramble everything until you get a homogeneous mixture, not too liquid, not too solid., You can regulate that by adding extra flour. Once its ready, knead the mixture well. After that, put the mixture into the flour bowl, cover it with a towel, and wait 40 minutes.
Now it's butter time. Melt it well, but be careful not to start frying. Shape the kosunak in whatever way you desire, and then spread the butter on its surface. A good way of shaping the kosunak is to make two or three prolonged pieces and braid them together, You can also spread some jam or even chocolate between those braids if you want. Put the kosunak on the baking tray and spread some more butter. Then add whatever you want on top – sugar, raisins, walnuts, almonds, whatever you desire. Let it sit there for some time.
Heat up an oven to about 200 °C and put the kosunak inside. After 10 minutes, decrease the temperature to about 180 °C and bake for 30 more minutes. And that’s it.

How to make vegan kozunac

While its impossible to completely replicate the traditional recipe with vegan ingredients, you can certainly make a delicious kosunak without animal products. Here’s how!
Ingredients
500 gr of flour
150 gr of brown sugar
150-200 gr of freshly squeezed juice (preferable orange and lemon)
15 gr of yeast
50 gr of coconut butter
50 gr of raisins
Some vanilla
30-40 gr of nuts (almonds, walnuts, whatever your heart desires)
Most of the same rules of making a kosunak apply in the vegan recipe. Indeed, it's almost the same, but with no animal products. Make sure all ingredients are warm.
Mix the juice, yeast, 2 spoons of sugar, vanilla, and 100 gr of flour into a bowl and let it sit for 20 minutes. Then add the rest of the flour, sugar, butter and mix it up. Let it sit for about an hour. Then start kneading the mixture, add the raisings and some of the nuts. Shape it up, and spread some butter on it. Put the rest of the nuts on top. Heat up the oven to 200 °C, put the kosunak in a tray, and bake for about 30-40 minutes. That’s it!
Like with the egg and milk kosunak, the vegan variant not only welcomes further experimentation with ingredients, it begs for it. You can add cocoa, other types of butter, sesame, tahini sauce, whatever you want.

How to eat kosunak?

The best way to eat this delicious dessert is with ayran (sometimes translated as doogh). Its often eaten in combination with Easter eggs. In fact, it not uncommon for whole eggs are kneaded into the kosunak itself. For the vegans out there, you can replace the ayran with some almond milk.
Whichever way you choose to cook your kosunak, make sure to make it sweet and rich. Otherwise, it would just be an elaborate bread, and that’s no way to end 7 weeks of abstinence and prayers. Good luck and happy cooking!

If you’re looking for a way to decrease your risk of developing coronary heart disease, stroke and type 2 diabetes, new research has revealed profound results from starting a simple new habit: consuming an extra 100 milligrams (mg) of magnesium via your food on a daily basis.
Researchers at Zhejiang University and Zhengzhou University in China found that more than 1 million people across nine countries who consumed the most magnesium tested out with a 10 percent lower risk of coronary heart disease, a 12 percent lower stroke risk and a 26 percent lower risk of type 2 diabetes.
Regarding the new research, which was published in Biomed Central, lead study author Fudi Wang, Ph.D., explains:
“Low levels of magnesium in the body have been associated with a range of diseases, but no conclusive evidence has been put forward on the link between dietary magnesium and health risks.
Our meta-analysis provides the most up-to-date evidence supporting a link between the role of magnesium in food and reducing the risk of disease ... Our findings will be important for informing the public and policy makers on dietary guidelines to reduce magnesium deficiency-related health risks.”
Wang said in a Medical Xpress news release that although current guidelines recommend that men take about 300 mg of magnesium a day, and women 270 mg per day, deficiencies in this mineral are still common, affecting anywhere between 1.5 percent to 15 percent of the population.
The researchers hope this new information serves to not just encourage people to make sure they’re getting adequate magnesium, but to prompt policy makers to change dietary guidelines, which could diminish the number of magnesium deficiency-related diseases.

Heart Issues Linked to Low Magnesium, but Science Takes a ‘Wrong Turn’

In 2013, the upshot of a “groundbreaking” review covering what was known about cardiovascular disease from as early as 1937 found that low magnesium levels —not high cholesterol or consumption of too much saturated fat —are the leading cause of many aspects of heart disease.
The 10-year review, conducted by research scientist and author Andrea Rosanoff, Ph.D., was based on the earlier research of Dr. Mildred Seelig, who studied the relationship between magnesium and cardiovascular disease for more than 40 years. Seelig noted:
“These numerous studies have found low magnesium to be associated with all known cardiovascular risk factors, such as cholesterol and high blood pressure, arterial plaque build-up (atherogenesis), hardening of the arteries and the calcification of soft tissues.
This means we have been chasing our tails all of these years going after cholesterol and the high saturated-fat diet, when the true culprit was and still is low magnesium.”
As early as 1957, Rosanoff says, it was very clear that low magnesium was “strongly, convincingly, a cause of atherogenesis and the calcification of soft tissues. But this research was widely and immediately ignored as cholesterol and the high saturated-fat diet became the culprits to fight.”
The “wrong turn” scientists took when the research was so clear, Rosanoff asserts, created a trajectory in the way heart disease and other cardiovascular issues have been dealt with across the board. This had resulted in entire populations failing to balance their magnesium intake with their calcium intake, and it’s getting worse.
Studies continue to show that when calcium and magnesium intake aren’t on an even keel, Rosanoff asserts, the risk of heart disease increases.

Evidence ‘Much Too Compelling to Ignore’

Medical and naturopathic doctor Carolyn Dean, a member of the Nutritional Magnesium Association’s Medical Advisory Board, asserts that it’s obvious that cholesterol isn’t the cause because statins have been the answer doctors have turned to for their patients for two decades, but heart disease is still the No. 1 killer in America.
Although there are many other medical conditions that can be attributed to low magnesium levels, Dean listed six of the most debilitating:

Hypertension (high blood pressure)
Type 2 diabetes
Problems optimizing cholesterol levels
Heart arrhythmia
Angina
Heart attack


Celebrity dietician Ashley Koff, also a member of Prevention magazine’s advisory board, noted that magnesium has rightfully received increased attention as a critical nutrient in relation to optimal health. Further, she believes that correcting levels of magnesium intake recommendations is one of the most critical health issues today.
“There are many challenges to achieving adequate intake of magnesium in the modern diet; thus I consider magnesium part of the essential nutrients to supplement daily and — in light of this review, specifically — crucial to preventing cardiovascular disease across patient populations.”
In one study, scientists found in a March 2017 study that hypertension was inversely associated with magnesium in children living in higher altitude areas of Argentina.
Another three-month, randomized, double-blind, placebo-controlled study revealed that magnesium supplementation improved the metabolic status of obese and pre-diabetic patients with mild cases of chronic kidney disease.

What Makes Magnesium Intake so Important?

Dr. Mehmet Oz, host of the nationally syndicated and Emmy Award-winning Dr. Oz Show, as well as vice-chair and professor of surgery at Columbia University, says magnesium is essential for helping regulate metabolism, and it helps lower blood pressure and dilate arteries.
Additionally, Oz asserts, arguably 3 of every 4 people in the U.S. fail to get the amount of magnesium they need, which means they’re magnesium deficient.
While the World Health Organization (WHO) recommends 400 mg to 500 mg of calcium, Dean advises a 1-to-1 balance with magnesium, with calcium consumed through your diet and adding vitamin D doses along with vitamin K2, “and all of these measures combined will protect your bones as well as your heart.”
Wang’s research analyzed data from 40 epidemiological studies from 1999 to 2016, looking at the associations between dietary magnesium and different diseases. All the studies used self-reporting food frequency questionnaires from 24-hour dietary recall to determine magnesium levels, and they varied widely.
Biological, lifestyle, gender and study location factors were also taken into account. Afterward, he explained, the researchers performed a dose-response analysis for the effect of each 100 mg-per-day increase of dietary magnesium.
The conclusion of the study reinforced the study conclusion that increased consumption of magnesium-rich foods could be beneficial for overall health. Wang’s press release noted:
“Magnesium is vital for human health and normal biological functions including glucose metabolism, protein production and synthesis of nucleic acids such as DNA. Diet is the main source of magnesium as the element can be found in foods such as spices, nuts, beans, cocoa … and green leafy vegetables.”

To understand how this works you really need to understand the concept of Tissue Level Hypothyroidism…

Tissue Level Hypothyroidism

Chronic pain in the setting of untreated Hypothyroidism or Hashimoto’s disease usually points to tissue level hypothyroidism.
Tissue level hypothyroidism refers to the idea that you can have adequate levels of thyroid hormone floating around in your blood stream, but because of inflammation or other causes it isn’t able to get into the cells to turn on your genes.
This is also known as Thyroid Resistance. And it is probably one of the most commonly missed thyroid conditions.
Standard laboratory tests can only measure what is happening in the blood stream.
But…
We don’t care what’s happening in the blood stream because thyroid hormone has to get into cells to do its job!
If you have adequate thyroid hormone floating around in the blood, but none of it can get into your cells, then you have what’s known as tissue level hypothyroidism.

The Link Between Fibromyalgia, Chronic Pain and Hypothyroidism

This is especially true if you’ve been diagnosed with Fibromyalgia.
You see…
Chronic pain and Fibromyalgia accompany each other, however no one has been able make the connection as to how or why.
But, if you look at the symptoms of Fibromyalgia and Hypothyroidism side by side you begin to see something amazing:

Fortunately, there was a researcher named Dr. Lowe who put this all together for us.
He linked tissue level hypothyroidism as one of the main causes of Fibromyalgia. And he did this through a concept known as ‘deductively formulated theory‘.
This method of problem solving takes all of the competing theories that cause a disease and by the use of mathematical analysis pumps out the hypothesis that is most likely to be correct. (This is the same logic that Albert Einstein used to come up with his hypotheses – like the theory of relativity).
He also showed that the majority of patients who fell into this category really needed some form of T3 therapy to have resolution of their symptoms.
His data showed that approximately 2/3 of his patients improved on Natural Dessicated Thyroid Hormone (Medication like Armour thyroid, Westhroid and Naturethroid) and another 1/3 required higher doses of T3 only therapy(Liothyronine or sustained release T3).
(Up to 1/3 of patients with Fibromyalgia failed to improve on NDT and required T3 therapy!)
He found that the pain of fibromyalgia could only be reversed if patients were on a high enough dose of thyroid hormone (exact dosing is highly variable andindividualized).

How do you know if you have Tissue level Hypothyroidism?

Unfortunately testing blood levels of thyroid hormone are not 100% accurate. As a result it’s best to use a combination of serum markers as well as Physical exam findings and subjective symptoms to diagnose tissue level hypothyroidism.
The most commonly reported symptoms include:

1. Fatigue

Thyroid hormone is involved in the production of Dopamine. If you have low levels of thyroid hormone you will have low levels of Dopamine which will result in the symptom of Chronic Fatigue.
Tyrosine is a precursor to thyroid hormone and dopamine
Thyroid hormone helps your body convert Tyrosine to Dopamine, Norepinephrine and Epinephrine. You may know some of these hormones as “adrenaline” which helps to set the metabolism of your body and is required for the “fight or flight” response.

2. Weight gain

Under normal circumstances thyroid hormone helps your body burn fat by increasing the effectiveness of lipolytic enzymes (enzymes that break down fat). When thyroid hormone is low, these enzymes are also low resulting in the inability to break down fat molecules – making it almost impossible to lose weight.
(Thyroid hormone increases enzymes that help you burn fat, when thyroid levels are low your cholesterol will increase and metabolism will slow down)

3. Hair Loss

It is well known that thyroid hormone is required for both hair growth and proper pigmentation.
When there isn’t enough thyroid hormone in the body not only will you be unable to grow new hair, you will also be unable to absorb nutrients required for hair growth (like zinc) which will lead to further hair loss in a vicious cycle.
(Low thyroid hormone leads to hair loss by itself but also leads to deficiencies of nutrients required for hair growth – it’s a double whammy)

4. Muscle Tension and Trigger Points

In order for muscles to relax your body must produce ATP (the energy currency in your body).
Thyroid hormone is responsible for this energy production and when you have low thyroid you have low energy production. This inability to relax your muscles results in trigger point formation and muscle tension/pain.

5. Delayed Relaxation Phase of Deep Tendon Reflexes

One of the most sensitive markers for tissue level hypothyroidism is this physical exam finding.
When tissue levels of thyroid are low it results in the inability of your muscles to relax quickly which causes a slow relaxation phase when checking deep tendon reflexes (Deep tendon reflexes is what happens when your Doctor hits your knee with his reflex hammer).
If you are suffering from any of these symptoms, plus chronic pain or you have been diagnosed with fibromyalgia – there is a chance you may have tissue level hypothyroidism!

What can you do to Treat Tissue Level Hypothyroidism?

Dr. Lowe created a treatment regimen which allowed him to have complete remission of symptoms in patients with fibromyalgia and chronic pain.
I have tailored his approach and added some areas to it and have had great success in treating patients with both Chronic pain and Fibromyalgia in my practice:
  1. Getting on the right dose and type of thyroid medication (most people with chronic pain will need some form of T3 therapy – like NDT or liothyronine).
  2. Exercising to tolerance – This means exercising to maximum intensity. Even if that means jogging down the street for 10 seconds! You must be placing physiologic demand on your body to change your genes and balance hormone levels.
  3. Real, whole food, Nutritious Diet – Avoid highly processed foods and focus on fruits and veggies (AKA “real food”). If it has a food label or more than 1 ingredient – leave it out.   4. Trigger point therapy – Either by massage or through trigger point injections. In order to reduce pain these points MUST be taken care of otherwise they will potentiate further pain and muscle spasm.
  5. Replacement of Nutritional Deficiencies – Most commonly being high doses of B complex vitaminsZinc, and Iron. But remember, deficiencies are highly variable so get tested!
  • Quick Tip: Remember that lab tests are not the best way to diagnose Tissue Level Hypothyroidism. Focus on a combination of lab tests, subjective symptoms, basal body temperature and metabolic function for diagnosis and management. You can learn how to diagnose and manage your thyroid here.

The scientists have then washed the contaminated apples with three different liquids, which include: tap water, a one percent baking soda/water solution, and a commercial bleach solution approved by the United States Environmental Protection Agency. The commercial bleaching solution is the most commonly used liquid in cleaning produce.
The results have revealed that submerging apples in a baking soda solution for two minutes removed more pesticides than a two-minute soak in the bleach solution, or two minutes of rinsing in running tap water. But it took 12 to 15 minutes in the baking soda solution to completely get rid of the pesticides used in this study
